白濁した豚骨スープと極細麺が特徴の博多ラーメンの旨さを追求し、世界中のファンに愛される「一風堂」。
日本文化も発信すべく、海外店では一品料理や日本酒も幅広く展開しています。
シンガポールでは11店舗のうち3店舗が酒バーを持ち、なんと約100種の日本酒を楽しめるとか。

お猪口を片手に、前菜からガツンと肉料理まで堪能し、〆にはもちろんラーメンを。
お腹も心も大満足!


酒バーは、Shaw Centre店、Mohamed Sultan店、Katong店(写真)にあり。




お店の一角には見事な日本酒セラーが!




ここでちょっと厨房に潜入。

「一風堂」が誇る豚骨スープは、クリーミーで旨みの宝庫でありながら、一切臭みなし。

材料はゲンコツ、背骨、さらに豚の頭を使用。

当地ではセントラルキッチンにて、職人たちが骨の血抜きやクリーニングなどの下準備に手間をかけ、灰汁や不純物を丁寧に取り除きながら、18時間かけて炊き上げてクオリティをキープしているそうです。




厨房で腕を振るうシンガポール営業部長の小川さんよりひとこと。

「妥協なき製法、濃度の管理、そして“人の舌”を駆使して、常に変わることなく美味しいスープをお出しすべく努力をしています。当地に自社製麺所があるからこそ、各スープにベストマッチの麺を組み合わせることができるのも強み。シーズンごとに登場する限定メニューもお楽しみに!」






メニューの一部をご紹介


白丸元味($14.85)

自慢の豚骨スープに、ほんのり甘めな九州醤油がベースの秘伝タレを組み合わせ、そこに麺線 26番の極細麺を投入。繊細でありながら力強く、麺の喉越しバツグン。




赤丸新味($15.85)

白丸に特製の香味油と辛みそを加え、コクとキレがやみつきに。辛みそを溶かし、味変を楽しみながら食して。




鶏しょうゆ($15.50)

豚骨もいいけど、あっさり系の鶏ガラスープも美味!九州醤油のほのかな甘みに、柚子のさわやかさがマッチ。 中太麺のモチモチ感もたまらない。




一風堂餃子($8.90/5個)

野菜の甘み、豚肉のコクが口内に広がる、安定の美味しさ。カリッ、モチッと美味しい皮も自家製。




塩豚串($6.50/3本)

九州で串焼きといえば、豚。柔らかな豚バラに、マイルドな塩味が合い、お酒がすすむ。




宮崎牛ビーフステーキ($29.80/100g)

上質なお肉をリーズナブルに提供。甘い肉汁がじゅわ~と染み出る宮崎牛を塩とワサビでシンプルに。




お酒は、日本各地の日本酒からケンゾーエステートのワインまで豊富なラインナップが魅力。

純米吟醸「庭の鶯」($70/ボトル)や「若波」($121/ボトル)など、福岡県の美酒も。

グラスで気軽に飲めるお酒も揃う。

学生時代から大好きな白丸。海外でも職人さんたちが手間暇かけてスープを炊いていると聞き、変わらぬ美味しさには理由がある!と深く納得。鶏しょうゆはお初でしたが、あっさりだけど奥ゆきがある味わいに、惚れました。次はどちらを注文しようかな……(編集A)

IPPUDO is well loved by fans all over the world for their delicious Hakata Ramen characterized by it’s ‘cloudy’ pork bone soup and fine noodles.

With the mission of spreading Japanese food culture, they also offer a wide range of Japanese dishes and sake in their overseas stores.

In Singapore, they have 11 dining stores and 3 of which incorporate a sake bar where you can enjoy over 100 kinds of sake.

The pork bone soup that IPPUDO is proud of is a treasure trove of creamy “umami-ness” made using different parts of the pig from the genkotsu, the spine and the head.

Prepared daily in their central kitchen facility, the chef laboriously clean the bones, removing the lye and impurities, and cook the bones for 18 hours!



A word from Mr Masaki Ogawa, General Manager of the Operations Department of IPPUDO Singapore, displaying his skills in the kitchen.

“At IPPUDO, we strive to serve the perfect soup that is consistent in quality and taste. Which can only be achieved by ensuring strict quality control in the production method and an uncompromising standard when we conduct taste tests. One of our strength is that we have the technology and know-how to produce our own noodles from scratch, so we are able to achieve the perfect combination between the noodles and our soup.”






Introducing a part of the menu


Shiromaru Motoaji ($14.85)

The pork bone soup that IPPUDO takes pride in is combined with a secret sauce that is based on a slightly sweet Kyushu soy sauce, and their home-made thin noodles – which is delicate and outstanding!




Akamaru Shinaji ($15.85)

Enhanced with a special fragrant oil and spicy miso to add a layer of richness and flavours to the original Shiromaru version. Mix the spicy miso into the ramen and savour how it elevates the flavours!




Chicken Shoyu ($15.50)

While IPPUDO is famed for their pork bones soup ramen, their chicken broth ramen as also as delicious! The refreshing taste of the yuzu matches the subtle sweetness of the Kyushu soy sauce perfectly. And the chewy texture of the medium-thickness noodles is irresistible!





IPPUDO Gyoza ($8.90 for 5 pieces)

Crispy on the outside and inside is a combination of the sweetness of the vegetables alongside the richness of the pork filling. It’s so delicious you simply can’t stop eating this!




Shio Buta ($6.50, 3 skewers)

Kyushu pork skewers featuring tender pork with a mild saltiness, best enjoyed with sake!




Miyazaki Wagyu Beef Steak ($29.80, 100g per portion)

Providing high quality beef steak at a reasonable price. Wagyu beef from Miyazaki prefecture served with wasabi.




A wide selection of sake from all over Japan and wine from Kenzo Estate.

Other alcoholic beverages are also available by the glass.

Featured here are Fukuoka Prefecture’s sake such as Junmai Ginjo “Niwa no Uta” ($70/bottle) and “Wakanami” ($121/bottle).

I loved IPPUDO’s Shiromaru ramen since the days when I was still a student. The chefs spend time and effort to laboriously prepare the soup and the same great taste has been consistent all these years! It was my first time trying with chicken soy sauce, but I fell in love with the lightness and depths of the flavours immediately. Which one should I order next……


As expected, the globally known IPPUDO did not disappoint! The large selection of sake from all across Japan goes really well with their delicious ramen!
